baking couture ANZAC COOKIES

Anzac biscuits

Anzac Day is tomorrow and every Anzac Day I try to make some of these delicious cookies. An Aussie classic to celebrate the remembrance for all those people who have defended and continue to defend our country.  


1 cup plain flour
1 cup rolled oats
1 cup brown sugar
1/2 cup coconut
125 g butter
2 tablespoons golden syrup
1 tablespoon water
1/2 teaspoon bicarbonate soda


1. Sift the flour into a bowl. Add the sugar, rolled oats and coconut.
2. Melt the butter in a saucepan and add the golden syrup and water.
3. Stir the bicarbonate of soda into the liquid mixture.
4. Add the liquid to the dry ingredients and mix thoroughly.
5. Place tablespoon of the mixture onto a baking paper lined tray, leave a little room for spreading.
6. Bake at 175 degrees celsius 15-20 min.
