baking couture ORANGE MUFFINS



2 .5 cups of self-raising flour, sifted
1 teaspoon baking powder
1 cup caster sugar
1 cup of orange juice
1 egg
1 teaspoon vanilla essence
2 oranges, chopped

Preheat oven to 180 degrees celsius. Place the flour, baking powder and sugar in a bowl. Place the orange juice, egg, chopped orange in a separate bowl and whisk to combine. Pour the liquid ingredients into the dry ingredients and mix until just combined. Line the muffin tray with paper baking cases, or spray with oil. sppon mixture into a 12 hole muffin tin. Bake for 30-35 minutes or until cooked when tested with a kewer. Remove from tin and cool on a wire rack. Makes 12.
